Ingredients
  

For the cake:

  • Boxed Carrot Cake Mix
  • 1 cup of grated carrots
  • 3/4 cup buttermilk
  • 3 eggs
  • 1/3 cup vegetable oil
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground ginger
  • 1/4 cup crushed pineapple drained

For the Cream Cheese Frosting:

  • 1/2 cup butter softened
  • 8 oz cream cheese softened
  • 1 tsp vanilla extract
  • 4 cups powdered sugar
  • 1/2 choped pecans

Instructions
 

Prepare Cake:

  • Preheat oven to 350 degrees
  • Combine Cake Mix, cinnamon, ginger & nutmeg together
  • Add grated carrots, eggs, buttermilk & oil to dry ingredients and mix well
  • Add to, two prepared 8" cake pans and bake 30 – 40 minutes until toothpick inserted near the center comes out clean.

Prepare Frosting:

  • In a bowl, beat together butter, cream cheese, and vanilla until smooth.
  • Gradually add powedered sugar and beat until creamy.

Assemble Cake

  • Once cake has cooled, decorate with frosting as desired
  • Add crushed pecans on top and drizzle with maple syrup if desired
