The Overlooked Birthday Celebration:
There’s a bit of a predicament when a birthday competes with Thanksgiving – a holiday that’s notorious for hogging all the attention with its festive turkey and trimmings. For my friend, whose special day falls on the 23rd of November, this means her birthday often merges into the Thanksgiving celebrations, sometimes getting lost in the shuffle. This year, amidst the chaos of conflicting schedules, her annual birthday dessert was still on my to-bake list, weeks overdue. I had envisioned a decadent cheesecake, a dream that remains on the horizon. However, her Sunday visit was fast approaching, and I needed a dessert that would not just suffice but dazzle.
A Tipsy Inspiration Turns Serendipitous:
A convivial lunch, seasoned generously with glasses of wine, gave rise to a spontaneous brainstorming session with Sean. Pie was the chosen canvas, but the filling was yet to be determined. We started with traditional flavors – pumpkin, sweet potato, chocolate cream – but soon veered into the realm of whimsy with ideas like Oreo pie and peppermint pie. Then, in a moment of unbridled creativity, the concept of a Twinkie pie emerged. Despite the lack of a consensus (Sean was more spectator than co-conspirator), I was undeterred. Armed with a box of Twinkies and a sleeve of graham crackers, I set out to create.
Assembling the Twinkie Masterpiece:
The foundation was a simple graham cracker crust, a buttery base for the sweetness to come. I eschewed additional sugar, thinking of the indulgent layers ahead. Baked briefly and allowed to cool, it was ready for its golden topping.

I sliced the Twinkies lengthwise and arranged them snugly over the crust, each a pillow of potential atop the crunchy base.

Next came the rich, creamy layer. Cream cheese, butter, powdered sugar, and a dash of vanilla extract were beaten to a fluffy nirvana and smoothed over the Twinkie layer, seeping into every possible space.

For the crowning glory, I whipped cream into stiff, proud peaks and spread it generously over the top. Shavings of dark chocolate created a constellation of cocoa upon the white expanse.

Innovative Add-Ins for the Twinkie Adventurous:
- Marbled raspberry coulis for a tart counterpoint to the sweetness.
- A sprinkle of toasted coconut flakes to add a crunchy texture and nutty flavor.
- Swirls of salted caramel for a luxurious twist, balancing sweet and savory.
- A handful of crushed pecans for a nutty crunch, echoing the festive season.
- Bits of toffee for a buttery crunch that complements the creamy filling.
- A layer of banana slices beneath the cream cheese for a fruit-infused surprise.

- Press the crumb mixture into the bottom and up the sides of a 9-inch pie dish.
- Bake the crust for 8 minutes until set and lightly golden. Allow to cool completely.

Chill and Serve:
- Refrigerate the pie for at least 4 hours, or overnight, to set.

Notes
- Crust Considerations: If you prefer a crust that’s a bit less sweet, considering the Twinkies and filling will add plenty of sweetness, you can reduce or omit the sugar. For those who enjoy a crunchier base, an additional baking time of a few minutes can help achieve that texture, but keep an eye on it to prevent burning.
- Cream Cheese Layer: It’s crucial for the cream cheese and butter to be at room temperature to ensure a smooth blend without lumps. Also, if you’re looking to cut down on sweetness, you can reduce the sugar amount in this layer, as the Twinkies will compensate with their own sugar content.
- Whipping the Cream: For the best results, chill your mixing bowl and beaters in the freezer for about 15 minutes before whipping the cream. This helps achieve a quicker and more stable whipped cream. Remember, the sugar in the whipped cream can be adjusted to taste, but adding it helps stabilize the whipped peaks.
- Twinkie Tips: When arranging the Twinkies, you can slice them into smaller pieces to ensure every slice of pie gets an even distribution of Twinkie. If you’re feeling adventurous, you can even try chocolate-covered Twinkies for an extra layer of decadence.
- Serving Suggestions: This pie is best served chilled. For a clean slice, dip your knife in hot water and wipe it dry between cuts.
- Garnish Ideas: While chocolate shavings make for a classic garnish, don’t hesitate to get creative. Try drizzling with caramel sauce, dusting with powdered sugar, or adding a sprinkle of crushed candy bars for added texture and flavor.
- Make-Ahead: This pie can be made a day ahead, making it perfect for gatherings. The flavors meld and set beautifully when given time to rest in the refrigerator.
- Storage: Leftover pie should be covered with plastic wrap or placed in an airtight container and can be stored in the refrigerator for up to 3 days.
With this concoction, what could have been a forgotten birthday was transformed into a celebration of the unexpected. The Twinkie pie, a testament to spontaneity and friendship, saved the day. Sometimes, it’s the unplanned creations that yield the sweetest rewards and the most cherished memories.

HA, this is for the skinny twinks sir. Did you really think this was clean & slimming. SMH
Brad,
Tom again. This looks like it might be easier than the cake. Is it sweet? I will make for Laura, as stated she like sweets a little too much. While she does not have any cases of diabetes yet, she may in the future. You wouldn’t believe that she cleared a whole top rack of Russell Stovers chocolates I provided as a gift to her with last week. She is a beautiful woman disputes her large stance. She is very interested in quilts. Will refer her to you once I see something about it here. Will make pie next week and provide you with a proper review.
Salutations,
Tom
